CHILLED CUCUMBER SOUP

Chilled Cucumber Soup
2 large cucumbers – peeled and diced (about 2 cups)
2 c. plain yogurt
1-2 cloves fresh garlic
8 fresh mint leaves
1-2 tsp fresh dill weed
Pinch of sugar or sugar substitute
1t lemon pepper
Pinch of dried chili peppers (to taste)
Pinch of salt (to taste)
Fresh dill weed - for garnish
Place all ingredients in food processor and purée until smooth. Chill in refrigerator overnight. Place in stoneware mugs; garnish with more fresh dill weed. Serves 6 (depending on size of mug). For a lighter soup, add more yogurt.
The stoneware mugs are also ideal for wine and other cool beverages.
